The paper is focused on the consequence of fatty acid composition and triacyloglycerol configuration in dietary fats for children. The distribution of fatty acids in sn-position of triacyloglycerols in human milk, cow milk, lard, vegetable oils and shortenings was compared. Lard is the most similar to triacyloglycerol of human milk because of distribution of palmitic acid in sn-2 and unsaturated fatty acids in sn-1 and sn-3. The meaning of stereospecific structure of triacyloglycerols on digestion, absorption and metabolism of lipids as well as the health risk for children and consumption of chemical modified fats like shortenings has been discussed.
